A panettone is a very soft and airy bun, and inside its texture opens up into long, beautiful fibers. It goes through a long rising process of up to three days, and after baking it is turned over to maintain its height and airiness. It comes with a filling of raisins and orange zest, and is topped with almond cream with granulated sugar and almonds.
